I am super excited about today’s recipe! I am cooking my favorite Brazilian Ham & Cheese Baked Rice with UNCLE BEN’S®!

This is one of those super simple dishes that goes together in minutes and is the perfect kid-friendly meal!

I love creating meals that allows the whole family to get involved in the cooking process.

It’s cooking time people!

Thanks to UNCLE BEN’S® READY RICE® this is the easiest meal I’ve ever prepared!

First, heat UNCLE BEN’S® READY RICE® according to package directions. Ham & Cheese Baked Rice with UNCLE BEN'S® -Creole Contessa

Secondly, grate carrots and dice green onions.

While you wait all of 90 seconds for the Butter and Garlic UNCLE BEN’S® READY RICE® to cook why not beat a couple of eggs and mix them with cream?

Now it’s time to put our rice into a large bowl and mix in diced ham, lots of cheese, a few spices, and our egg/cream mixture.

Did I mention lots of cheese?

You guys all know how much I love cheese, and in this recipe we have mozzarella, cheddar, jack, and a little Parmesan!

Oh…don’t forget to top the casserole with a little extra ham and diced mozzarella!

Lastly, once all this goodness is mixed up nicely it’s time to place it into a greased casserole dish and bake at 350 degrees for about 30 minutes.

Broil for 5 more minutes then garnish with a little chopped parsley and extra green onions.

Ham & Cheese Baked Rice with UNCLE BEN’S®
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 6-8
Ingredients:
4 packs UNCLE BEN’S® READY RICE®, Garlic and Butter
2 eggs, beaten
2 carrots, grated
2 cups diced black forest ham, reserve 1/2 cup for topping
2 cups heavy cream
1 cup sharp cheddar cheese, grated
1 cup jack cheese, grated
1 cup Parmesan cheese, grated
1 cup mozzarella, diced, reserve half for topping
1 teaspoon creole seasoning or seasoned salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon oregano, dried, crushed
1/2 cup green onions,
diced parsley and extra green onions to garnish
Directions:
Preheat oven to 350 degrees and grease a 13X9 inch casserole dish.
Mix seasoning blend together and set aside.
Cook UNCLE BEN’S® READY RICE® according to package directions.
Beat eggs and cream and mix with 1/2 of the spice blend.
Remove UNCLE BEN’S® READY RICE® from packaging and place into a large bowl.
Top UNCLE BEN’S® READY RICE® with remaining seasonings, cream/egg mixture, grated carrots, ham, cheese, and green onions, mix well and place into casserole dish.
Top with remaining ham, diced mozzarella and bake at 350 degrees for 30 minutes.
Broil for 5 minutes more and garnish with green onions and chopped parsley.
Allow dish to set up for about 5 minutes before serving.
