It’s grilling time and I headed over to my local Walmart and picked up some tender and juicy Smithfield® Ribs!
I can’t wait to share with you my super easy and delicious Mexican Ribs! Yes folks that grilled ribs with all our favorite Mexican flavors.
I’m cooking with Smithfield® Ribs and we’re about to have a Hog Wild Throwdown!

So while at Walmart don’t forget to also pick up a bag of Kingsford Charcoal and KC Masterpiece BBQ Sauce!
To create the ultimate grilled Mexican Ribs you must start off with lots of citrus fruits!
I marinated my Smithfield® Ribs in lemon, orange, lime zest and juice.
I also added extra virgin olive oil, Mexican oregano, smoked paprika and few other delicious spices.
The trick is to marinate our Mexican Ribs in the fridge overnight to make sure all that Mexican goodness soaks deep into our ribs!
I removed the ribs from the fridge and allowed them to come to room temperature while I prepped my grill!
Lay your ribs on the top grill rack away from the coals and grill!
Lastly, coat ribs in our KC Masterpiece Chipotle BBQ sauce!
Remove the ribs from the grill, allow to rest about 10 minutes and it’s time to serve these babies up!

Grilled Mexican Ribs
Prep Time: 10 minutes
Cook Time: 3 hour 30 minutes
Total Time: 3 hour 40 minutes
Servings: 4
Ingredients:
1 slab Smithfield® Ribs
2 limes, zested, juiced
2 oranges, zested, juiced
2 lemons, zested, juiced
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons brown sugar
1 tablespoon creole seasoning
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chili powder
1 tablespoon oregano, crushed
1 tablespoon smoked paprika
1 tablespoon garlic, minced
1 bottle KC Masterpiece Chipotle BBQ sauce
1 bag of Kingsford Charcoal
hickory wood chips, soaked according to package directions
Directions:
Mix seasoning blend together and set aside.
Rinse ribs and pat dry.
Coat ribs in olive oil and red wine vinegar on both sides, season both sides with spice blend.
Lastly, coat ribs in juice, zest, and garlic.
Cover ribs and refrigerate overnight, bring to room temperature while you prep your grill.
Preheat your grill at 275 degrees F, using hickory wood and charcoal.
Place the ribs on the grill away from the flame, using indirect heat.
Cook the ribs for approximately 2 1/2 hours with the curl side up.
Flip the ribs over to finish cooking for approximately 1 hour or until you get full “bend” in the slab.
Baste with Chipotle BBQ sauce, remove from heat, allow to rest 10 minutes before serving.
